Our pastry team, lead by pastry chef, Lauren Carter, has been blending butter and flour into magic for years. Lauren worked at L'Etoile here in Madison as a pastry-chef and returned to Madison after a year as a baker in Seattle at North Hill Bakery. She uses traditional French recipes and a few from her mom!
